how hard would it be to have the training server use one of the real maps, or maybe rotate thru maps, i found that i could fly with easy and land with ease on the minecraft level there but i was having some issues landing / dropping crates in some of the tighter areas with terrain that was uneven trees/buildings

Our training server on PR just has that airfield map set by default. Any map can manually be set if someone has admin privileges.
If you wanted to take the practice up a notch, you could try joining an empty/low co-operative server now that you have the hang of flying. Just maybe avoid ones that are "Tactical Realism" or anything like that, they tend to be a little more strict and aimed more towards experienced players. Most other coop servers are good for learning anything on.

the thing i need to practice most is dropping crates, especially trying to drop them on a rooftop, i managed to insert a few squads on rooftops in muttrah but i kept dropping the godam crate on the street below

I used to fly the Huey a lot back when we were playing Muttrah 24/7. The crates in the Huey, when I flew, dropped out of the right side of the chopper. It probably changes depending on the helicopter though.
Also, dropping crates from too high of an altitude causes them to shatter upon landing, if you haven't already had that happen.
